Corn Tortilla!!

I roasted Ceiba Honey from Forest coffee recently and although it tastes great in the cup in its whole bean form it smells like corn tortilla. I am trying to figure out if this is a bean issue or roast issue. I'm leaning more towards roast issue but all of my roasts I did that day with similar roasting schedule (gas/air) turned out fine. Below is the link the coffee. It is a little different in the processing method so I am not sure if that could be the case.

Now if we can get some other beans that smell like carne asada and pico de gallo... haha

But given the same roasting parameters, I'm more inclined to say this is more on the bean side. The bacteria and other wee beasties that hang out with the coffee seed during the fermentation portion of honey/natural processes can do funny things sometimes. From personal experience, I unfortunately ran into a lot of natural Rwanda that smelled AND tasted like raw dirty potatoes. Glad your batch is cupping nicely.

Thanks for some reassurance! I am going to run a batch tomorrow and drop it a few degrees hotter. I did a test batch in the Kaffelogic I picked up and although I still got the Corn Tortilla it wasn't as pronounced. But the other good flavors I had went away :(
