Roastery planning question

Question: We are looking into renting a little warehouse or a small spot where it’s temperature controlled. Is there anything else we should look into that the property should have or we need to add in while looking for our spot to roast?

Answer: Ideally, you want the food service stuff or easy access to water and drain connections to support a 3 compartment sink, hand wash station and a slop or utility sink to empty mop buckets
Ideally, you'd like room to place up to a 15kg or 20kg roaster (room to grow) where you can spot the vent stack such that a bigger roaster drops into place with enough clearance to be legal and safe.
Ideally, you'll have a 12' minimum ceiling height. 12' is good, 16-20' is better and allows you to install pallet racking for green storage.
You need access to 16" water column or greater gas pressure and for electrical 230 volt, 20 amp service.
Ideally you have both a ground level garage door into the space and a semi-truck height dock door.
You can work around many of these things, but if you can find a place that checks all the boxes your life will be enormously easier as you grow.
