Trouble with First Crack on Anaerobic Processed Coffee

Hello everyone,

I’ve been working on an anaerobic processed lot, and I’ve tried roasting it with several profiles. The issue I’m running into is that it only seems to work well with a light roast profile. Previously, I took your advice (thank you for that!) that a light roast finishing around 375°F would be suitable. However, my main struggle is with the first crack: Sometimes I don’t hear the first crack at all. Other times, I think I might be hitting it, but I’m not entirely sure. Because of that, I end up placing my “assumed” first crack marker.

My core question is about this specific challenge:

Has anyone else faced this issue with anaerobic lots?

Is not hearing the first crack actually a problem in itself?

In your experience, at what temperature does first crack usually begin in most roasts?

Any insights would be really helpful. I’d love to hear your thoughts and learn from your experiences.

I have not faced the specific issue you mentioned but I have had some beans that are not as loud. Do you mind posting your graph with times? I clicked and seen you had one roast profile made visible. On the visible one looks like you are speeding through Maillard phase and hitting 1st crack around 7mins. Might want to back your gas schedule down or charge temp down if you are roasting half batch sizes (3kg on 6kg roaster). Allowing the been to build up some more internal energy may court you a more noticeable 1st crack.

If you mean the general profile visible on my page, that was for another lot and I only used it for seasoning.

Actually, I’m roasting on a 6kg machine but only using 2kg batches. If you sometimes experience a lower crack volume with anaerobic coffees, that’s exactly what I’m aiming at. I never had this issue with natural or washed lots.

Here’s the current profile I’m working with:

49% – 39% – 12%

End temp: 370°F
