Uneven Brazil Natural-Normal?

Hi everyone! Still getting the hang of our Mill City Roaster, but loving it! I'm working on a Natural Brazil from Cafe Imports, and getting an uneven roast no matter what I try.

6.6 lb batches, I have upped my drum speed to 75, and have been adjusting the fan speed trying to find the optimum. Profile and bean pic attached. Any hints to even out the roast a bit?

The roast is too fast. Try green/yellow at 5:30, FC at 10:30 and discharge finish temp at 12:30.

I'll try dropping the heat sooner and lower than I have been. 30 sec soak recommended as well?

So this was my 3rd try of slowing down. It looks a bit better. Any tips for slowing down more? Profile attached at bottom

Hi Steve, that curve has worked for me with natural process coffees. Could you give me some tips on how to properly manage a washed process with extended double fermentation (South America)?
